In order to make weight class for my very first fight this year- I had to lose 20+ pounds. In order to do this, I carb cycled...and it worked fantastically (more on that later). Carb cycling is, however, extremely difficult to do when you have a rampant sweet tooth like I do. In order to cope with the sweet cravings, I found lots of great recipes from other lovely fitness blogs (thanks you!) and got a bit creative myself. So I thought I'd share one of those recipes with you all!
Dark chocolate, peanut butter, and avocado truffles:
I know.I know. These sound gross, but they're actually smooth, creamy bites of goodness! (Especially when you've been carb cycling for a few weeks.)
Ingredients:
-2 oz dark chocolate baking chocolate (2 squares)
- 1 tbsp natural peanut butter
- half an avocado
- tsp vanilla
- cocoa powder (for rolling)
- cinnamon (for rolling)
- 1 packet stevia
Melt the chocolate in the microwave. While doing that, mash the avocado until smooth. Combine everything in a bowl with the peanut butter, vanilla, and stevia. Mix and place in the refrigerator to chill for a few minutes. *This will help you roll them a little better* Roll a spoonfull into a ball and then roll each one in cocoa and cinnamon. Chill until ready to eat! Makes 6-7 truffles.
